Colicchio Consulting has partnered with JW Marriott Las Vegas Resort & Spa + Rampart Casino in Summerlin, NV, to reimagine and enhance the property’s food & beverage offerings and outlets.
Colicchio Consulting was selected to bring a new culinary vision to the property’s food and beverage destinations while honoring both the continuing growth of the Summerlin residential market and the property’s historic roots as a luxury casino and convention hotel. Working together with the property’s onsite leadership team, Colicchio sourced multiple new food and beverage destinations within the property, which include multi-cultural inspiration from local, regional and national cuisines, designs and attitudes.

The new F&B destinations at the JW Marriott Las Vegas Resort & Spa + Rampart Casino include:
- Wineaux: A wine-focused lobby bar, boutique wine shop and light-bite restaurant from chef Shawn McClain and partner Rich Camarota. It offers a curated by-the-glass and bottle list in a “refined, comfortable social” setting. This marks the brand’s first hotel-based location and will serve as a centerpiece of the new guest experience.
- ai Pazzi: The Las Vegas debut of chef Fabio Viviani brings upscale Italian dining to the resort, blending a “refined Italian atmosphere and thoughtful takes on handmade pasta and fresh seafood combined with playful and mischievous tableside preparations.”
- The Neighborhood Food Walk: A set of “first-to-market” locations led by three authentic chef-driven, high-demand concepts that bring both L.A. and NYC energy to the Summerlin resort crowd:
• Tacos 1986: A SoCal taqueria created by Victor Delgado & Joy Alvarez.
• For the Win: Sharing a bar with Tacos 1986, For the Win offers traditional American fare with “prize-fighter attitude,” such as smash burgers and fried chicken sandwiches from chef Santos Uy and Stephanie Uy.
• ai Pazzi Pizza: Chef Viviani adds a neighborhood-style pizza bar to the Prominade Food Walk.
• Nom Wah: A landmark Chinatown NYC institution (est. 1920), led by NYC culinary entrepreneur Wilson Tang, makes its Las Vegas debut with this outpost. Nom Wah invites both hotel guests and Summerlin locals to enjoy the cultural legacy of authentic dim sum that reaches far beyond the original institution’s 90-year history.
• Pearls – Oyster & Crudo Bar: Also by Viviani, this seafood-focused space complements Ai Pazzi and provides a “New Orleans meets Amalfi” take on a traditional oyster bar.
The property recently completed a $75-million, multi-year renovation as part of its 25th anniversary, which was celebrated in Q4 of 2024. The property-wide transformation focused on infusing its classic Spanish Colonial architecture with modern luxury, wellness and touches of “mindful indulgence” as part of its commitment to embrace its historical roots.
