The Manchester Grand Hyatt San Diego, one of Southern California’s largest hotels with 1,628 rooms, is in the midst of a multimillion-dollar transformation. Parts of the renovation, such as the guestrooms in the Seaport Tower and Sally’s restaurant, have been completed. The entire renovation is expected to be completed by winter 2026. Hotel Business caught up with Dena Roady, area VP/GM, to get her thoughts on the transformation.

Could you please tell me about the redesign of the guestrooms in the Seaport Tower? What inspired the redesign, what changes were made and what color palette was used?
Our redesigned Seaport Tower deluxe guestrooms are a true reflection of San Diego’s coastal spirit and maritime heritage. Working with Parker Torres Design, we’ve created spaces that feel both luxurious and welcoming, inspired by the elegant yachts in the nearby marina. You’ll notice rich wood tones paired with soft blues that echo the bay, along with thoughtful details like yacht-inspired patterns and reflective artwork that bring the seaside ambiance indoors. This transformation marks an important milestone in our comprehensive renovation, and we’re excited to offer guests a sophisticated, distinctly San Diegan experience as we continue to elevate the property.
What was involved in the updates to Sally’s restaurant?
The updates to Sally’s reflect a complete reimagining of the space—now an open-air, waterfront dining experience where guests can take in beautiful bay views while enjoying thoughtfully crafted cuisine and cocktails. We’ve introduced a bold Baja Med-inspired menu led by Chef Alvaro Garcia, showcasing fresh Mexican and Mediterranean flavors. From standout seafood dishes to prime cuts and inventive cocktails, there’s truly something for everyone.

In addition to the food and design, we’ve added new programming like our “Sunset Salute” toast offered every Wednesday; “Mini Hour” featuring small-format versions of signature dishes and drinks; and “Sally’s Til 6” with oyster specials and local beverage collaborations. We’ve also just launched brunch, available Saturdays and Sundays from 11 a.m.-2 p.m., and the menu is chef-driven with a range of brunch favorites and unique, locally inspired twists.
What are some of the other areas that will be renovated, and what will that include?
Our property-wide renovation is a significant investment in the future of Manchester Grand Hyatt and will also include reimagining the guestrooms, the more than 320,000 sq. ft. of meeting and event space, all dining venues on the property and the recreational spaces, including two rooftop pool decks, sports courts and a new fitness center.

Guestrooms will feature a design inspired by classic yacht aesthetics, with rich wood tones and soft blue hues that reflect our bayfront setting. The Seaport Tower will be completed by winter 2025, followed by the Harbor Tower in summer 2026.
We’re also refreshing our expansive event spaces, including the Harbor and Seaport Ballrooms, with upgraded technology, integrated AV and a light, coastal-inspired design. Additionally, the terraces overlooking the bay will be revitalized to enhance the indoor-outdoor experience our guests love.
On the dining front, we’ve already reopened Sally’s, and additional updates will include enhancements to Seaview Restaurant’s breakfast offerings with locally sourced ingredients, and an expanded MARKET | ONE, with improved flow and retail selections. Top of the Hyatt will also receive a complete refresh, which will temporarily close in late 2025 and reopen early 2026.
We’re especially excited about the recreation updates, including two fully redesigned rooftop pool decks—one adult-oriented with craft cocktails and a full-service bar, and the other a fun, family-friendly space with new play features and cabanas—as well as a state-of-the-art fitness center and refreshed sports courts coming in 2026. Altogether, these renovations are about enhancing every aspect of the guest experience while celebrating everything that makes this location so special.
What is the timeline for the complete renovation to be finished?
The renovation has been executed in phases to minimize disruption. The guestroom redesign began earlier this year, and recreational areas are expected to be finished by winter 2026.
