Columbia Hospitality has added the Henry Christopher Hotel, a restored landmark destination in Plymouth, WI, to its portfolio. Construction of the property is underway inside the newly restored H.C. Laack Block building. The hotel is expected to open in 2027.
The property will feature two signature food and beverage concepts, Pharmacy restaurant and The Mullet Rooftop Bar. Pharmacy will celebrate the community’s nostalgic apothecary history and culture, while The Mullet will debut as Plymouth’s first and only rooftop bar.
The Gentine Family will own the Henry Christopher Hotel. Columbia Hospitality will manage all operations at Henry Christopher Hotel, Pharmacy, and The Mullet.
